CutePDF Very useful utility used as a normal printer to generate PDF files like Acrobat Writer. Any Windows application able to print  (Microsoft Word, Excel, Internet Explorer, ..)  can use CutePDF to  create a PDF document.

Dia is roughly inspired by the commercial Windows program 'Visio', though more geared towards informal diagrams for casual use. It can be used to draw many different kinds of diagrams. It currently has special objects to help draw entity relationship diagrams, UML diagrams, flowcharts, network diagrams, and many other diagrams. It is also possible to add support for new shapes by writing simple XML files, using a subset of SVG to draw the shape.  It can load and save diagrams to a custom XML format (gzipped by default, to save space), can export diagrams to a number of formats, including EPS, SVG, XFIG, WMF and PNG, and can print diagrams (including ones that span multiple pages).

DocPad is a superior alternative to Notepad. Although it fills the same role, plain text editing, it has many advantages: 10-level undo, alphabetization, block indent/unindent, bookmark, case conversion, encoding conversion, file history, jump to line, jump to offset, keyboard macros, print preview, search and replace, spell checking, statistics, variable pitch font, and much more. It also includes a built-in calculator, calendar, and character map.

EditPad Lite is a general-purpose basic text editor, designed to be small and compact. EditPad can be used to open and edit files on DOS, Windows, Unix or MAC format.

FreeMind is a mind mapper, and is at the same time an easy-to-operate hierarchical editor with strong emphasis on folding. These two are not really two different things, just two different descriptions of a single application. Often used for knowledge and content mgmt.
